LET ME SHARE WITH YOU SOME OF
WHAT I DO AND MY WORK!

My name is Eugenia, and I'm a Bilingual Nutritionist, Diabetes Care Specialist, and Certified Health Coach specialized in Diabetes. Additionally, I have lived with type 1 diabetes since 1995. In 2019, I started Healthy Diabetes, a project that includes educational resources and counseling in diabetes management.

 

One of my goals is to empower those living with prediabetes and diabetes to not only reach their glucose management goals but to live their lives to the fullest. I enjoy providing nutrition guidance and diabetes education both one-on-one and in groups.

I have extensive experience working online with diabetes (type 1, type 2, LADA, gestational diabetes, prediabetes) and helping to prevent or delay its diagnosis and the complications that come with it.
 

I'm the author of the book "I'm Different and I Like it", which focuses on the importance of acceptance while living with diabetes, and the low-carb cookbook "Sweet·N·Healthy" where you will find delicious, easy-to-make recipes that will have none or little impact on your blood glucose. Recently, I co-authored the book "Once upon a time there was Diabetes"which addresses diabetes burnout from a professional perspective with a unique, personal touch. I also co-authored the chapter "Assessment of Nutritional Status in Special Conditions" in the book "Assessment of Nutritional Status in the Human Life Cycle" for the Mexican Association of Members of Faculties and Schools of Nutrition (AMMFEN).

 

I contributed to the translation from English to Spanish of the book "Think Like a Pancreas" and "Rufus Comes Home". I also translated the books "Rosie Becomes a Warrior" and "Rosie the Type 1 Diabetes Warrior Goes to Diabetes Summer Camp".

LET'S TEAM UP

Over the years, I have participated as a speaker at various national and international conferences and have had the opportunity to collaborate with educational texts and materials with organizations such as Beyond Type 1, JDRF, American Diabetes Association (ADA), Mexican Diabetes Federation, Mexican Diabetes Association in Guanajuato. Universities such as the Universidad Iberoamericana León, Universidad de Guanajuato, Universidad Cuauhtémoc Aguascalientes, the Colegio de Nutriólogos de Guanajuato as well with the Diabetes Online Community and some companies and organizations focused on diabetes management.
 

One fundamental part of my work is the advocacy efforts to raise the voice of those of us living with diabetes to the relevant places in order to seek access for all to comprehensive diabetes treatment.
